Ingredients

Instructions

  • Preheat the oven to 325°F (163°C). Mix the graham cracker crumbs, melted butter, and 1/4 cup sugar together in a bowl. Press this mixture into the bottom of a 9-inch springform pan. As you press the crust into the pan, recite: "Stability and calm, in life's steady psalm, ground us firm, keep us from harm."
  • In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract together until smooth and creamy. As you mix it together say: "Sweetness and love, like the cooing of the dove, fill our hearts, sent from above."
  • Beat in the eggs, one at a time, mixing just enough to incorporate each one. As you do, say, "One by one, 'neath the sun, shield us from harm, spiritual growth begun."
  • Mix in the sour cream and flour until smooth. As you do, say, "Purity's call, protection for all, grounded we stand, in this endeavor, tall."
  • Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  • Bake for 1 hour in the preheated oven. The cheesecake is done when the center is set and the top looks dry.
  • Let the cheesecake cool in the oven with the door slightly open for about an hour. Then, remove from the oven, cover with plastic wrap, and refrigerate for at least 4 hours, or overnight if possible.
  • Before serving, arrange the strawberry halves on top of the cheesecake and heat the strawberry jam until it's runny. Brush or drizzle the jam over the strawberries, and garnish with fresh mint leaves.
